This tomato weighed in at three quarters of a pound, on its own. My husband grows the absolute best tomatoes!
Together with another small armful picked this morning, it was due for roasting. Roasting tomatoes gives a wonderful flavour , concentrating the scent and taste.
Into a tin they went with a good sprinkling of fresh Basil, sea salt and black pepper, a shake of oil and a hot oven.
Then, since the oven was on high, I thought I would make some scones, some for now and some for the freezer.
And then, just because..... I made two cakes, one for now, and one for the freezer. See the tomatoes, cooled and put in the boxes ready for the freezer?
They will be made into tasty roast tomato soup in the Winter.
Sounds heavenly, especially a nice swim after all the work. Hugs

ReplyDeleteYour tomatoes look so delicious and oven roasted tomatoes with basil and olive oil are so good.
At the moment here in NZ our tomatoes are not good, they do not have much colour in winter and can't wait until we have ripe, juicy red tomatoes again.

My sister gave me a recipe for roasted tomatoes that she really liked. I will have to give it a try sometime.

You've accomplished a LOT and certainly deserve a swim after such a hot day. What a tomato your husband grew! We're still waiting for ours to ripen. They are turning pale yellow now.
